Tasty Mexican pasta dish

Ingredients

  • 1/4 cup olive oil
  • 12 ounces fideo pasta
  • 1 medium onion diced
  • 4 cloves garlic minced
  • 1 teaspoon each ground coriander, mexican oregano, and new mexico chili pwder
  • 1 bay leaf
  • 2 cups crushed tomatoes
  • 1 1/2 cups chicken stock
  • - salt and pepper
  • 1 cup chopped smoked deli turkey
  • 1 cup cheddar cheese shredded
  • sour cream and scallions for garnish

How To Make sopa seca ( dry soup )

  • Step 1
    Preheat oven 375 degrees. Brush a 9 inch pan with oil.
  • Step 2
    Place the olive oil in a skillet and heat it up. Add the fideos and brown on both sides. Transfer to a plate.
  • Step 3
    Add the onion to the skillet and cook about 8 minutes. Stir in the garlic, coriander, oregano, chili powder and bay leaf. Cook about 30 seconds. Add the crushed tomatoes and cook about 2 minutes.
  • Step 4
    Add the chicken stock and the fideos into the skillet. Season with salt and pepper. Cook for about 5 minutes. Stir in the turkey cook 5 more minutes. Remove the bay leaf.
  • Step 5
    Spoon into the prepared pan and top with cheese. Cover with foil and bake about 15 minutes.
  • Step 6
    Serve with sour cream and scallions
