Ingredients
- 1/4 cup olive oil
- 12 ounces fideo pasta
- 1 medium onion diced
- 4 cloves garlic minced
- 1 teaspoon each ground coriander, mexican oregano, and new mexico chili pwder
- 1 bay leaf
- 2 cups crushed tomatoes
- 1 1/2 cups chicken stock
- - salt and pepper
- 1 cup chopped smoked deli turkey
- 1 cup cheddar cheese shredded
- sour cream and scallions for garnish
How To Make sopa seca ( dry soup )

Step 1Preheat oven 375 degrees. Brush a 9 inch pan with oil.

Step 2Place the olive oil in a skillet and heat it up. Add the fideos and brown on both sides. Transfer to a plate.

Step 3Add the onion to the skillet and cook about 8 minutes. Stir in the garlic, coriander, oregano, chili powder and bay leaf. Cook about 30 seconds. Add the crushed tomatoes and cook about 2 minutes.

Step 4Add the chicken stock and the fideos into the skillet. Season with salt and pepper. Cook for about 5 minutes. Stir in the turkey cook 5 more minutes. Remove the bay leaf.

Step 5Spoon into the prepared pan and top with cheese. Cover with foil and bake about 15 minutes.

Step 6Serve with sour cream and scallions
