This recipe came from my X son-in-laws family, years ago. It's simple, quick and delicious! Inexpensive as well.

Ingredients

  • 2 pounds ground beef, or ground turkey/chicken
  • 1 pound vermicelli, uncooked
  • 1 quart tomatoes, canned and cut up
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 quart water
  • 1/2 teaspoon chili powder
  • 1 can corn (or frozen if you prefer)
  • 1/2 cup chopped onion ( or amount to taste)
  • - chopped garlic (amount to taste)
  • 1 cup chopped celery
  • - grated cheese if desired

How To Make sofa-di-fidel

  • Step 1
    Brown hamburger in large skillet. Add salt, pepper and chili. Add onions and garlic and simmer until cooked through. Drain, remove from skillet and set aside.
  • Step 2
    Brown broken vermicelli gradually in hamburger drippings. (You may have to add a little olive oil if it's too dry). Mix in the hamburger mixture and add tomatoes and water. Cover and cook until vermicelli is tender. (Just like you would do Rice-A-Roni.)
  • Step 3
    Add the corn, celery and onion and stir. These are supposed to be crunchy but you CAN saute' first if you prefer. Sprinkle with grated cheese to top and let it melt. If more tomato is needed - you can add some tomato sauce if necessary.
