snappy tuna salad
(1 RATING)
Not only is this "snappy," it puts together in a "jiffy." It's good as a sandwich with cheese (I like Feta) or as salad with hard boiled eggs and/or pasta.

Ingredients
- 1 can tuna (in water or oil -- your choice)
- 2 tablespoons celery, finely chopped
- 2 tablespoons onion, finely chopped
- 2 tablespoons mayonnaise
- 3/4 teaspoon lemon pepper
- 1/2 teaspoon lemon zest (optional)
- 1/4 cup macaroni or shell pasta, cooked and drained (optional)
- 1 - hard boiled egg, chopped or sliced (optional)
How To Make snappy tuna salad
-
Step 1Combine drained tuna, celery, onion, mayonnaise and lemon pepper in small bowl. Additional (optional) lemon zest brightens it even more.
-
Step 2Cover and refrigerate for at least 30 minutes to marry flavors.
-
Step 3This can be served as a sandwich, a plain tuna salad or (my favorite) add a sliced hard boiled egg and some cooked pasta and serve over a bed of lettuce.
