smoky chipotle chili hot dog penne pasta
My husband will eat hotdogs every day if he could. I came up with this when we had a bunch of grilled hotdogs left over from a cook out. It's has a smoky heat and makes a really tasty dish. Great with a dollup of sour cream to tame the heat a bit.

Ingredients
- 1 package 8 hot dogs
- 8 ounces penne pasta
- 1 medium onion diced
- 1 tablespoon canola oil
- 15 ounces can tomato sauce
- 1 tablespoon each chipotle chili powder, cumin, prepared mustard
- 1/2 cup ketchup
- 2 cups shredded cheddar cheese

Step 1Cook the hot dogs on grille to get that charcoal flavor. Cut into pieces. Cook the penne pasta in boiling salted water and drain.

Step 2Add oil in a large skillet. Saute the onion until softened. Mix the chipotle chili powder, cumin, prepared mustard and ketchup together.

Step 3Add the chili powder mixture to the pan with the onions. Add the can of tomato sauce. Stir in the hot dogs. Cook 3 minutes. Add the penne pasta and cook 3 more minutes. Top with cheddar cheese and place a lid over the pan until cheese is melted.
