My husband will eat hotdogs every day if he could. I came up with this when we had a bunch of grilled hotdogs left over from a cook out. It's has a smoky heat and makes a really tasty dish. Great with a dollup of sour cream to tame the heat a bit.

Ingredients

  • 1 package 8 hot dogs
  • 8 ounces penne pasta
  • 1 medium onion diced
  • 1 tablespoon canola oil
  • 15 ounces can tomato sauce
  • 1 tablespoon each chipotle chili powder, cumin, prepared mustard
  • 1/2 cup ketchup
  • 2 cups shredded cheddar cheese

How To Make smoky chipotle chili hot dog penne pasta

  • Step 1
    Cook the hot dogs on grille to get that charcoal flavor. Cut into pieces. Cook the penne pasta in boiling salted water and drain.
  • Step 2
    Add oil in a large skillet. Saute the onion until softened. Mix the chipotle chili powder, cumin, prepared mustard and ketchup together.
  • Step 3
    Add the chili powder mixture to the pan with the onions. Add the can of tomato sauce. Stir in the hot dogs. Cook 3 minutes. Add the penne pasta and cook 3 more minutes. Top with cheddar cheese and place a lid over the pan until cheese is melted.
