My cousin gave me this recipe and I ran with it! Adding my own twist to it. It is a favorite in our husband LOVES it!

12 oz
linguine or any pasta (cooked)
3 Tbsp
butter, cut up
3 Tbsp
olive oil
4 tsp
minced garlic
1 lb
peeled, deveined extra large shrimp
1/4 c
chopped scallions or green onions
1/4 tsp
each of salt and pepper
2 tsp
grated lemon zest
1/4 c
each of lemon juice and chopped parsley

How to Make Shrimp Scampi Pasta


  • 1Prepare pasta al dente. Heat butter and oil in a large skillet over medium heat until butter melts. add garlic, cook 30 seconds more. Add shrimp, scallions, salt and pepper and cook, stirring about 5 minutes just until shrimp turn pink. Remove from heat. Stir in lemon zest, juice and parsley, Drain pasta and rinse...Put pasta on plates and top with shrimp mixture.
  • 2This recipe serves 4 but can easily be doubled and takes only about 20 minutes to prepare.

    Note: I love the lemon flavor so I add a little more lemon zest and sometimes add a tablespoon or 2 of capers if I have them on hand. I also buy a bag of frozen cooked shrimp and use it in this recipe. It turns out just as good with alot less work because it is already peeled and deveined :)
