shrimp scampi pasta

My cousin gave me this recipe and I ran with it! Adding my own twist to it. It is a favorite in our house...my husband LOVES it!

Ingredients

  • 12 ounces linguine or any pasta (cooked)
  • 3 tablespoons butter, cut up
  • 3 tablespoons olive oil
  • 4 teaspoons minced garlic
  • 1 pound peeled, deveined extra large shrimp
  • 1/4 cup chopped scallions or green onions
  • 1/4 teaspoon each of salt and pepper
  • 2 teaspoons grated lemon zest
  • 1/4 cup each of lemon juice and chopped parsley

How To Make shrimp scampi pasta

  • Step 1
    Prepare pasta al dente. Heat butter and oil in a large skillet over medium heat until butter melts. add garlic, cook 30 seconds more. Add shrimp, scallions, salt and pepper and cook, stirring about 5 minutes just until shrimp turn pink. Remove from heat. Stir in lemon zest, juice and parsley, Drain pasta and rinse...Put pasta on plates and top with shrimp mixture.

    This recipe serves 4 but can easily be doubled and takes only about 20 minutes to prepare. Note: I love the lemon flavor so I add a little more lemon zest and sometimes add a tablespoon or 2 of capers if I have them on hand. I also buy a bag of frozen cooked shrimp and use it in this recipe. It turns out just as good with alot less work because it is already peeled and deveined :)
