shrimp scampi
Here is a low-fat recipe for Shrimp Scampi. It was my first attempt at cooking with frozen shrimp and I say it turned out good. My hubby is used to having sauces on pasta and he said the light saucey stuff on this is good :)

Ingredients
- 8 ounces angel hair pasta or pasta of your choice
- 1 3/4 cups chicken broth
- 2 cloves garlic, minced
- 1/4 teaspoon lemon-pepper seasoning
- 1/4 cup chopped green onions, divided
- 1/4 cup minced fresh parsley, divided
- 1 pound uncooked shrimp, peeled and deveined
How To Make shrimp scampi

Step 1Cook pasta according to package directions.

Step 2Meanwhile, in a large saucepan, combine the broth, garlic, lemon pepper, and 3 TBSP. each green onions and parsley. Bring to a boil. Add shrimp; cook for 3-5 minutes or till shrimp turn pink.

Step 3Drain pasta and place in a serving dish. Top with shrimp mixture and remaining onions and parsley. Enjoy!
