Ingredients

  • 2 pounds shrimp, peeled & deveined (tails off)
  • - salt and pepper, to taste
  • - olive oil, extra virgin
  • 1 medium onion
  • 2 tablespoons garlic, chopped
  • 1/2 cup lemon juice, fresh
  • 1/2 cup white wine
  • 1/2 cup shrimp stock (or vegetable stock if can't find)
  • 2 tablespoons butter, cold
  • 2 tablespoons parsley, fresh, chopped
  • - lemon slices, for garnish
  • - rice or angel hair pasta, as accompaniment

How To Make shrimp scampi

  • Step 1
    Season the shrimp thoroghly with salt & pepper.
  • Step 2
    Heat large saute pan over medium-high heat. When the pan is hot, add enough oil to lightly coat the pan. Add the shrimp & quickly saute until just starting to turn pink, but not cooked through. Remove the shrimp from the pan & set aside.
  • Step 3
    Add the onions & saute just until they begin to soften, about 3 minutes. Add the garlic & cook another 30 seconds. Add the lemon juice, wine, stock & reduce by 2/3, aboout 5 minutes.
  • Step 4
    Add the shrimp bak to the pan & swirl in the butter. Finish with the parsley & check for seasoning.
  • Step 5
    Garnish with lemon slices & serve over rice or angel hair pasta (which is my favorite).
