Ingredients

  • 3 - tomatoes, peeled and diced or
  • 2 cans diced tomatoes
  • 1/2 cup water
  • 1/4 cup onions, finely chopped
  • 2 tablespoons fresh basil, chopped
  • 1 pound shrimp, cooked, peeled and deveined
  • 1/3 cup parmesan cheese, grated
  • 1 cup mushrooms, sliced
  • 1/3 cup tomato paste
  • 1/4 cup fresh parsley
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 1-2 clove garlic, minced
  • 1 pound fresh asparagus, cut into 2-3 inch spears
  • 1 pound dry fettuccine

How To Make shrimp primavera

  • Step 1
    In medium saucepan, combine tomatoes, mushrooms, water, tomato paste, onion, parsley, basil, sugar, salt, pepper and garlic.
  • Step 2
    Boil gently, uncovered about 20 minutes, stirring occasionally.
  • Step 3
    Add the shrimp, heat through.
  • Step 4
    Meanwhile, boil the noodles according to package directions. Add the asparagus for the last 3 minutes of cooking, drain.
  • Step 5
    Toss pasta and sauce together and serve. Sprinkle with Parmesan cheese.
