shrimp penne pasta with artichoke or asparagus
This is a very easy, quick meal to prepare, especially if you keep these ingredients available in your pantry and freezer. Do not over cook the shrimp... Add asparagus (2" lengths) when adding shrimp for al dente, or a little earlier if you like it more tender. I take a vegetable peeler to the stalks if they are on the large side.
Ingredients
- 2-3 tablespoons extra virgin olive oil
- 1 - onion, thinly sliced
- 5-8 cloves fresh garlic, crushed
- To Taste - sea salt & freshly ground pepper
- 28 ounces large shrimp, peeled
- 12 ounces artichoke hearts, quartered
- 28 ounces diced tomatoes, with juice
- 1 pound penne pasta
- To Taste - parmigiano-reggiano cheese, freshly grated
- To Taste - spice islands pizza & pasta sicilian seasoning
- To Taste pound use about a pound of asparagus if substituting for artichokes
How To Make shrimp penne pasta with artichoke or asparagus

Step 1Cook pasta, drain and aside.

Step 2Sauté onion and garlic in olive oil on medium-low to medium heat.

Step 3Salt and pepper to taste.

Step 4Add tomatoes with juice and simmer for several minutes.

Step 5Add artichokes, simmer again.

Step 6Add shrimp and simmer until shrimp is cooked through.

Step 7Remove pan from heat to stop cooking process.

Step 8Rinse pasta in very hot water, drain thoroughly, and put on plate.

Step 9Top with shrimp and artichoke mixture.

Step 10Top with freshly grated cheese and ground seasoning mix or pepper.
