shrimp pasta with mushrooms
I found this recipe a long time ago and have tweaked it to my liking. It is really creamy and delightful and full of great flavor. My whole family loves it and the kids like the tri-color rotini pasta. Enjoy!

Ingredients
- 1 pound rotini pasta
- 1/4 cup butter
- 1 pound medium shrimp, peeled and deveined
- 3 teaspoons old bay seasoning (or any seafood seasoning)
- 1/3 cup shrimp stock or water
- 1/2 cup chopped green onions (plus a few for garnish)
- 1 cup fresh mushrooms thinly sliced
- 1 pint heavy whipping cream
- 1 tablespoon garlic, chopped
- 1/3 cup grated parmesean
- - salt and pepper to taste

Step 1Cook the pasta according to package directions

Step 2Over med-high heat, melt the butter in a large sauce pot. Add the chopped garlic and cook for about 2 min. Add the shrimp and 3 tsp of seasoning. Stir and cook the shrimp for about 2 minutes more.

Step 3Stir in the stock, or water and cook for about 7 minutes.

Step 4Add the green onions, mushrooms, grated Parmesan, whipping cream and salt and pepper, stir. Cover and cook on med heat for 6-8 minutes.

Step 5Add the pasta to the shrimp and reduce heat to low. Cook for 3 minutes more. Sauce will thicken as it stands. Serve
