shrimp and broccoli with pasta
I love shrimp scampi, but the traditional version is way too calorific! This version is more diet friendly. About 6 WW points per serving as written. (You could use rice instead of pasta!)

Ingredients
- 4 ounces uncooked pasta, any small variety
- 3 cups fresh broccoli, finely chopped
- 2 teaspoons olive oil, divided
- 6 cloves garlic, grated or minced, divided
- 1/2 teaspoon each salt and pepper, or to taste, divided
- 1 teaspoon butter
- 1 pound shrimp, peeled and tails removed
- juice and zest of 1 lemon
- 1 tablespoon minced parsley
- hot pepper sauce
- grated parmesan cheese, to serve
How To Make shrimp and broccoli with pasta

Step 1In a medium pot, boil salted water, then add pasta and broccoli. Cook until pasta is al dente. Drain, save about 1/2 cup liquid.

Step 2In the same pot, heat 1 tsp of the oil and cook half the garlic briefly, add pasta/broccoli mixture back to pan, and stir all together, adding some of reserved cooking liquid. Turn off heat, cover to keep warm.

Step 3Melt butter and remaining oil over medium heat in a large frying pan or skillet. Add rest of garlic and sauté briefly - about 30 seconds.

Step 4Add shrimp, season with salt and pepper. Heat until warmed, if using cooked shrimp. Or, heat raw shrimp until both sides are pink and opaque.

Step 5Remove shrimp from heat and add lemon juice, lemon zest and minced parsley to shrimp. Stir to mix.

Step 6Divide pasta/broccoli mixture onto 4 plates. Add 1/4 of shrimp on top of pasta. Pass hot sauce and parmesan cheese for each person's own taste.
