auntie kathy's sausage tortellini soup

My aunt gave me this recipe...and as always, I tweaked it a bit. Great with freshly baked bread sticks.

Ingredients

  • 1 pound italian sausage, hot
  • 1 cup onion, chopped
  • 2 cloves garlic, peeled and minced
  • 28 ounces can crushed tomatoes
  • 1 cup carrots, chopped
  • 1 cup green beans, fresh or zucchini (i think green beans have more flavor)
  • 1 - green bell pepper, chopped
  • 2 cups cheese filled tortellini (from the pasta aisle, not frozen. better flavor than frozen)
  • 6 cups beef stock
  • 8 ounces tomato sauce
  • 1 tablespoon italian seasoning
  • 1 pinch crushed red pepper
  • - grated parmesan cheese, if desired
  • - salt & pepper to taste

How To Make auntie kathy's sausage tortellini soup

  • Step 1
    In 5 qt stockpot, brown sausage, remove from heat and drain (I also rinse to remove some of the fat). Sauté onion and garlic until tender. Add all ingredients except for the tortellini and parmesan cheese. Bring to a boil and then lower to a simmer. Simmer uncovered for 60 minutes or until carrots are tender. Add tortellini and simmer uncovered until the tortellini is done (about 10 minutes). Season with salt & pepper to taste. Grate parmesan cheese and add to bowl if desired. Note: you can use broth instead of stock but stock has a richer flavor and about half the sodium.
