Ingredients
- ROASTED SPAGHETTI
- 12 ounces spaghetti
- FOR THE DISH
- 1 cup pasta water
- 1/4 cup extra virgin olive oil
- 6 cloves garlic minced
- 1 teaspoon each lemon zest and juice
- 1/4 teaspoon red pepper flakes
- salt and pepper
- shredded parmesan for serving
How To Make roasted spaghetti with garlic and olive oil

Step 1Heat oven to 350 degrees. Lay out the uncooked spaghetti in a flat layer. Roast in oven until the spaghetti gets to a dark brown color about 15 minutes. Remove from oven and let cool.

Step 2Set a large pot of water on the stove and add salt. Once boiling cook the roasted spaghetti until al dente. This will take longer than usual due to the spaghetti being roasted. About 35 to 40 minutes. Drain and reserve 1 cup of pasta water.

Step 3Heat the oil in a skillet and add the garlic and red pepper flakes and cook 30 seconds. Add the spaghetti, lemon zest and juice. Start with 1/2 cup of the pasta water to make a sauce add more if needed.

Step 4Season with salt and pepper and serve with cheese sprinkled on top.
