I like making shrimp dishes and combining them with pasta and some vegetables this is a quick meal to prepare.

  • 8 oz
    linguine pasta
  • 1 3/4 lb
    large peeled and deveined shrimp
  • 2 Tbsp
    olive oil, extra virgin
  • 6 clove
    garlic,thinly sliced
  • 3/4 c
    flat leaf parsley rough chopped
  • 15
    grape tomatoes sliced in half
  • 1 sm
    green pepper diced
  • 1/4 c
    dry white wine
  • 1 Tbsp
    grated fresh ginger

How to Make Roasted Shrimp Scampi


  1. Cook pasta according to package directions. Drain and put into large bowl.
  2. Heat oven to 400F..In a large casserole or baking dish add toss the shrimp with all the ingredients , roast until the shrimp is opaque throughout about 12 to 15 minutes....Pour over pasta and toss to combine.
