Ingredients

  • 3 tablespoons salt
  • 1 pound rigatoni pasta, uncooked
  • 3.5 tablespoons butter, melted
  • 1/2 cup pepperoni slices cut into quarters
  • 1/2 cup fontina cheese, shredded
  • 1/2 cup mozzarella cheese, shredded
  • 1 cup heavy cream
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon nutmeg

How To Make rigatoni with three cheeses

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    In lots of boiling water, add the salt and rigatoni.
  • Step 3
    Cook until super al dente as they are going into the oven.
  • Step 4
    Drain and rinse in cold water.
  • Step 5
    In a large bowl, mix the butter into the pasta until it is well coated.
  • Step 6
    Add the three cheeses and the cream.
  • Step 7
    Toss well and add 1/2 the parmesan while tossing.
  • Step 8
    Place in a buttered casserole and sprinkle the remaining parmesan on top.
  • Step 9
    Sprinkle the nutmeg over everything and bake for 15 to 20 minutes.
  • Step 10
    When the top of the pasta has turned golden brown, it is done.
