1Cook pasta according to package directions. Brown the italian sausage(casing removed), adding onion and garlic half way through browning. Once sausage-onion mixture is cooked through, add the can of crushed tomatoes. Let it simmer for about 5-10 minutes. Mix ricotta, seasonings and 1/2 parmesan in a bowl. Drain pasta, then add it to the ricotta mixture. Add 1/2 cup of the sausage-tomato sauce to the pasta.
Heat broiler on low. Spray a casserole dish with cooking spray. Pour the pasta mixture into the casserole dish and top with the remaining sauce. Spread 2 cups of mozzarella cheese and 1/2 cup of parmesan cheese on top of pasta. Broil for 5-10 minutes or until the cheese is melted and slightly brown on top.
Serve with crusty french bread and garden salad.
