How to Make Ricotta with Tomatoes and Sausage Pasta

  1. Cook pasta according to package directions. Brown the italian sausage(casing removed), adding onion and garlic half way through browning. Once sausage-onion mixture is cooked through, add the can of crushed tomatoes. Let it simmer for about 5-10 minutes. Mix ricotta, seasonings and 1/2 parmesan in a bowl. Drain pasta, then add it to the ricotta mixture. Add 1/2 cup of the sausage-tomato sauce to the pasta.

Heat broiler on low. Spray a casserole dish with cooking spray. Pour the pasta mixture into the casserole dish and top with the remaining sauce. Spread 2 cups of mozzarella cheese and 1/2 cup of parmesan cheese on top of pasta. Broil for 5-10 minutes or until the cheese is melted and slightly brown on top.

Serve with crusty french bread and garden salad.
