quick and simple corned beef cassarole

This is a delicious quick and simple one pot recipe from my bachelor days that the family devours. We yet to have any leftovers. A typical response is, "OMG that's delicious." I called it a casserole but I never take the time to put bread crumbs on it and bake it in the oven. Just serve it straight off the stove top. Enjoy!

Ingredients

  • 1 box kraft original velveeta shells & cheese, any size
  • 1 can libby's corned beef
  • 1 medium onion, diced
  • 2 tablespoons butter

How To Make quick and simple corned beef cassarole

  • Step 1
    Open box and set the cheese packet aside and prepare the shells as directed on box. Strain and set aside.
  • Step 2
    In the same pan that the shells were cooked in, add butter and onion and cook over medium high heat till translucent.
  • Step 3
    Add corned beef. Chop and stir till corn beef is broken up.
  • Step 4
    Remove from heat and add the package of cheese from the box into the corned beef mixture. Stir till combined.
  • Step 5
    Add drained shells to corned beef mixture. Stir and return to heat till warm.
