poor man's spaghetti
This is my Mother's recipe. She called it poor mans spaghetti, at the end of the month when pantry was low she would put together spinach, and pasta with spices. I added a few ingredients and threw in a pot of stock, dry noodles and all. I made this even easier and still a great price at about $7.00 for 6 servings!

Ingredients
- 5 cups vegetable stock (chicken or beef can be used
- 12 ounces spaghetti or linguini noodles
- 1 - 14.5 oz can diced tomatoes w/ peppers and onion
- 2 tablespoons olive oil
- 8 ounces frozen chopped spinach
- 4 cloves chopped fine garlic
- 1/2 teaspoon each dried oregano and basil
- 1/4 teaspoon red pepper flakes
- - pinch of pepper
- 1/4 cup parmesan cheese
How To Make poor man's spaghetti

Step 1Add vegetable stock and tomatoes in juice to large pot, turn heat to high. Break up pasta and add to pot. Add rest of ingredients stir and bring to rapid boil with lid on. Make sure all ingredients or covered by liquid.

Step 2Remove lid stir and turn heat down to med. Continue boiling stirring every few minutes for about 20 minutes or until pasta is cooked. Serve with more parmesan cheese and fresh italian bread.

Step 3If you cant find tomatoes with onion and pepper. Use can chopped tomatoes and add one medium chopped onions. Or veggie of choice.
