Ingredients

  • 1/3 cup salad dressing, oil & vinegar
  • 1 package pierogies, frozen, thawed, flavor of your choice (i use potato/cheese, potato/onion, whatever i can find)
  • 1 package stir fry veggies or whatever you like
  • 1 package baby spinach
  • 2 - plum tomatoes, cut into 1/4" thick slices
  • 1/4 cup feta cheese, crumbled

How To Make pierogies & veggies

  • Step 1
    In a large skillet, heat 3 Tbsp dressing over medium-high heat. Add pierogies, in batches if necessary; cook, turning once, until browned, about 3 - 4 minutes each side. Remove from skillet; keep warm.
  • Step 2
    Add stir fry to skillet; cook until most liquid has evaporated, about 2 minutes. Add pierogies, spinach & tomatoes. Cover, cook stirring once, until spinach is wilted, about 1 minute.
  • Step 3
    Stir in remaining dressing.
  • Step 4
    Before serving, sprinkle with feta. Enjoy!
