We love pierogis and this casserole is a modern rendition of the traditional meal. It really tastes like a pierogi. The layers of pasta and potatoes are cheesy and delicious. As if that wasn't decadent enough, buttered onions are mixed into the potatoes and baked on top. Oh my... This is a savory dish that's warm and comforting. Your family will love it.

Ingredients For pierogi casserole

  • 10-12
    medium potatoes, peeled and mashed
  • 2 bag
    cheddar cheese, shredded; 8 oz each
  • 2 1/2 stick
    butter or margarine
  • 2 md
    onions, diced
  • 1 lb
    lasagna noodles, cooked

After the casserole comes out of the oven, sprinkle with a bit of cracked pepper and fresh parsley for added color.
  • Lasagna noodles cooking in a pot.

    Cook noodles according to package.
  • Potatoes cut into equal size chunks.

    Cut potatoes into equal chunks.
  • Potatoes in boiling water.

    Add potatoes to boiling water and cook until tender.
  • Onions sauteing in butter.

    While your potatoes are boiling, saute onions in butter until soft.
  • Mashing hot, cooked potatoes.

    Mash your potatoes while hot.
  • Adding cheese to potatoes.

    Add in cheese and beat with mixer.
  • Adding part of the onion/butter mixture to potatoes with salt and pepper.

    Add 1/3 of the onions/butter mixture to the potato mixture and salt and pepper to taste.
  • A layer of noodles covering the pan.

    Preheat oven at 350. Generously butter a 9x13” baking pan/dish. Place a layer of cooked noodles to cover bottom of pan.
  • Potato mixture on top of lasagna noodles.

    Then a layer of potato mixture.
  • Adding additional noodle layer on top of potato layer.

    Repeat ending with noodles.
  • The rest of the onion/butter mixture on the top layer of casserole.

    Spoon the rest of the butter and onion over top.
  • Casserole as it comes out of the oven.

    Cover with foil and place pan on a cookie sheet just in case the butter runs over the sides. Bake at 350 until heated through - approximately 30-40 min.

    Optional: I take off foil after 30-40 minutes and sprinkle more cheese on top and place back in oven until cheese is melted.
