Ingredients
- 2 tablespoons olive oil
- 4 bone in chicken thighs
- salt and pepper
- 4 cloves garlic, minced
- 1/2 cup heavy cream
- 1/4 cup pesto (homemade is best or store bought)
- 1 cup cherry tomatoes, halved
- 8 ounces spaghetti
How To Make pesto chicken pasta with burst cherry tomatoes

Step 1Place oil in a large skillet. Season the chicken with salt and pepper. Add the chicken skin side down. Brown until golden skin forms. Turn chicken over and cook until golden on other side. Cook and turn the chicken two more times. Cook about 15 minutes. Remove chicken from pan and set aside.

Step 2Pour out all but a couple tablespoons of grease. Add the garlic and cook 30 seconds. Add the cream and pesto. Stir in the tomatoes and cook 5 minutes. Add the chicken back and continue to cook until chicken juices run clear about 10 more minutes.

Step 3While chicken is cooking boil a pot of salted water and cook the spaghetti until al'dente. Serve the chicken with the cream sauce over the pasta.
