We had a similar dish at an Italian restaurant called "Sizzilini". When trying to duplicate that dish, we found a recipe online called "Peperonata". So I mixed it up a bit adding the chicken and pasta to resemble the dish at the restaurant. As a side note - if you are looking for a lower calorie/carb meal, I substitute spaghetti squash for the pasta in mine. I just take my portion out prior to tossing with the pasta. Hope you enjoy!

Ingredients

  • 3/4
    lb. chicken cut into strips
  • 1/4 c
    olive oil
  • 1/2
    each red, yellow, orange, green bell pepper
  • 1
    large onion
  • 2 tsp
    garlic
  • 1/2 Tbsp
    oregano, dried
  • 1/2 Tbsp
    sugar
  • 1 can(s)
    diced tomatoes
  • 1/4 c
    basil, dried
  • ·
    salt & pepper to taste
  • ·
    spaghetti noodles; amount optional. i used approximately 1/4 of a box.

How to Make Peperonata

Step-by-Step

  1. Cook spaghetti per box directions or to your liking.
    Heat oil in large sauté pan on medium high heat. Add chicken strips and cook for about 5-7 minutes.
  2. Add onions and sauté for another 2-3 minutes. Sprinkle with salt.
  3. Add the peppers and stir well to combine with the onions. Saute for another 4-5 minutes, stirring often. Peppers should be al dente - cooked, but with a little crunch left in them.
  4. Add garlic, sugar, oregano, basil and diced tomatoes. Heat through, salt & pepper to taste.
  5. Toss with cooked spaghetti.
