peperonata
We had a similar dish at an Italian restaurant called "Sizzilini". When trying to duplicate that dish, we found a recipe online called "Peperonata". So I mixed it up a bit adding the chicken and pasta to resemble the dish at the restaurant. As a side note - if you are looking for a lower calorie/carb meal, I substitute spaghetti squash for the pasta in mine. I just take my portion out prior to tossing with the pasta. Hope you enjoy!

Ingredients
- 3/4 - lb. chicken cut into strips
- 1/4 cup olive oil
- 1/2 - each red, yellow, orange, green bell pepper
- 1 - large onion
- 2 teaspoons garlic
- 1/2 tablespoon oregano, dried
- 1/2 tablespoon sugar
- 1 can diced tomatoes
- 1/4 cup basil, dried
- - salt & pepper to taste
- - spaghetti noodles; amount optional. i used approximately 1/4 of a box.
How To Make peperonata

Step 1Cook spaghetti per box directions or to your liking. Heat oil in large sauté pan on medium high heat. Add chicken strips and cook for about 5-7 minutes.

Step 2Add onions and sauté for another 2-3 minutes. Sprinkle with salt.

Step 3Add the peppers and stir well to combine with the onions. Saute for another 4-5 minutes, stirring often. Peppers should be al dente - cooked, but with a little crunch left in them.

Step 4Add garlic, sugar, oregano, basil and diced tomatoes. Heat through, salt & pepper to taste.

Step 5Toss with cooked spaghetti.
