penne with spicy tomato sauce

This is one of my meatless signature dishes. The original recipe came from Canadian Living Cookbook but I tweaked it to my own liking. It has become a favorite in our house and I always serve it at special occasions and I always get rave reviews. * not my pic

Ingredients

  • 3 tablespoons olive oil
  • 4 cloves garlic , minced
  • 1/2 teaspoon red pepper flakes
  • 1 can 28 oz plum tomatoes pureed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/3 cup chopped fresh basil and cilantro
  • 1 pound pkg penne
  • 1 tablespoon brown sugar or to taste
  • 1/2 cup freshly grated parmeasn cheese

How To Make penne with spicy tomato sauce

  • Step 1
    In a lge dutch oven saute garlic and add pepper flakes and cook till fragrant...be careful not to burn!! Add pureed tomatoes, s/p and simmer till thickened. Stir in half the basil and cilantro. Meanwhile cook your penne. Drain well. Pour sauce over noodles and top with remaining fresh basil and parmesan cheese. Serve with a crisp green salad. So delicious!!
