Ingredients For penne with ricotta and mushrooms

  • 12 oz
    mushroom, chopped
  • 3 Tbsp
    olive oil
  • 3 clove
    garlic, minced
  • 6 c
    chicken stock
  • 12 oz
    penne pasta
  • 1/2 c
    ricotta cheese
  • 1/4 c
    fresh basil chopped
  • salt and pepper

How To Make penne with ricotta and mushrooms

    Add the chicken stock to a large pot. Add the penne and cook until most of the stock is absorbed and the penne is cooked. The pasta should still have some chicken stock to serve as a sauce. Taste and add salt and pepper

    Meanwhile, add the olive to a saucepan and add the mushrooms. Season with salt and pepper. Cook until the mushrooms have given up their moisture. Add the garlic and cook 30 more seconds.

    To assemble, place the penne on the plate. Dollop the ricotta over top and then top with mushrooms. Garnish with basil.
