Ingredients For penne with peas & scallops

  • 1 box
    penne pasta
  • 1/3 c
    olive oil, extra virgin, divided
  • 12 oz
    bay scallops
  • 2
    shallots
  • 1 1/2 c
    peas, frozen
  • 5
    plum tomatoes, chopped
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1/2 c
    parmesan cheese, grated
  • can add shrimp too! (optional)

How To Make penne with peas & scallops

    Cook pasta according to directions on package. Drain, reserving 1/2 C of the pasta water. Return pasta to pot.

    Heat 2 Tbsp oil in large skillet over high heat. Add scallops & saute 5 - 6 minutes or until cooked; stirring occasionally. Remove from skillet & set aside.

    Heat remaining oil in skillet; saute shallot 1 - 2 minutes. Add peas, tomatoes, salt & pepper. Reduce heat to low; cook 3 - 4 minutes, stirring occasionally. Add reserved pasta water & stir until blended.

    Add tomato mixture & scallops to hot pasta & toss. Transfer to serving platter; sprinkle with parmesan cheese.
