Ingredients
- 1 box penne pasta
- 1/3 cup olive oil, extra virgin, divided
- 12 ounces bay scallops
- 2 - shallots
- 1 1/2 cups peas, frozen
- 5 - plum tomatoes, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup parmesan cheese, grated
- - can add shrimp too! (optional)
How To Make penne with peas & scallops

Step 1Cook pasta according to directions on package. Drain, reserving 1/2 C of the pasta water. Return pasta to pot.

Step 2Heat 2 Tbsp oil in large skillet over high heat. Add scallops & saute 5 - 6 minutes or until cooked; stirring occasionally. Remove from skillet & set aside.

Step 3Heat remaining oil in skillet; saute shallot 1 - 2 minutes. Add peas, tomatoes, salt & pepper. Reduce heat to low; cook 3 - 4 minutes, stirring occasionally. Add reserved pasta water & stir until blended.

Step 4Add tomato mixture & scallops to hot pasta & toss. Transfer to serving platter; sprinkle with parmesan cheese.
