penne with chorizo

I had to use up the chorizo I had in the refrigerator...what to make? I wasnt sure what I wanted but had a taste for pasta so I made up this dish. Both my Husband and I had two servings each! It was delicious. I have to get the recipe down right away so I wouldnt forget it! I hope you try it too.

Ingredients

  • 1 pound cooked penne
  • 2 sticks chorizo (mexican sausage, mild or medium
  • 1 - green pepper-chopped
  • 1/2 - sweet onion-chopped
  • 3 cloves garlic-chopped
  • 3-5 - roma tomatoes-chopped
  • 15 ounces ricotta cheese
  • 1/4 cup basil pesto

How To Make penne with chorizo

  • Step 1
    Start water for pasta and cook per directions.
  • Step 2
    Heat a heavy skillet on medium heat and fry out chorizo.
  • Step 3
    When the sausage is nearly done add the peppers, onion and garlic. Cook until tender.
  • Step 4
    Add tomatoes to skillet and cook a few minutes. Then add the ricotta cheese and stir well to combine. Continue to cook just until the mixture starts to bubble.
  • Step 5
    Drain the pasta and add back to the pot. Pour the chorizo mixture over the pasta and add the basil pesto. Stir well and serve with a sprinkling of Parmesan cheese.
