penne with chorizo
I had to use up the chorizo I had in the refrigerator...what to make? I wasnt sure what I wanted but had a taste for pasta so I made up this dish. Both my Husband and I had two servings each! It was delicious. I have to get the recipe down right away so I wouldnt forget it! I hope you try it too.

Ingredients
- 1 pound cooked penne
- 2 sticks chorizo (mexican sausage, mild or medium
- 1 - green pepper-chopped
- 1/2 - sweet onion-chopped
- 3 cloves garlic-chopped
- 3-5 - roma tomatoes-chopped
- 15 ounces ricotta cheese
- 1/4 cup basil pesto
How To Make penne with chorizo

Step 1Start water for pasta and cook per directions.

Step 2Heat a heavy skillet on medium heat and fry out chorizo.

Step 3When the sausage is nearly done add the peppers, onion and garlic. Cook until tender.

Step 4Add tomatoes to skillet and cook a few minutes. Then add the ricotta cheese and stir well to combine. Continue to cook just until the mixture starts to bubble.

Step 5Drain the pasta and add back to the pot. Pour the chorizo mixture over the pasta and add the basil pesto. Stir well and serve with a sprinkling of Parmesan cheese.
