I had to use up the chorizo I had in the refrigerator...what to make? I wasnt sure what I wanted but had a taste for pasta so I made up this dish. Both my Husband and I had two servings each! It was delicious. I have to get the recipe down right away so I wouldnt forget it! I hope you try it too.

Ingredients

cooked penne
2 stick
chorizo (mexican sausage, mild or medium
1
green pepper-chopped
1/2
sweet onion-chopped
3 clove
garlic-chopped
3-5
roma tomatoes-chopped
15 oz
ricotta cheese
1/4 c
basil pesto

How to Make Penne with Chorizo

Step-by-Step

  • 1Start water for pasta and cook per directions.
  • 2Heat a heavy skillet on medium heat and fry out chorizo.
  • 3When the sausage is nearly done add the peppers, onion and garlic. Cook until tender.
  • 4Add tomatoes to skillet and cook a few minutes. Then add the ricotta cheese and stir well to combine. Continue to cook just until the mixture starts to bubble.
  • 5Drain the pasta and add back to the pot. Pour the chorizo mixture over the pasta and add the basil pesto. Stir well and serve with a sprinkling of Parmesan cheese.
