Ingredients
- 36 ounces cherry tomatoes
- 2 tablespoons olive oil
- 5 cloves garlic (or 5 Tbsp of minced jar garlic)
- 3/4 teaspoon dried crushed red pepper
- 2 cups shredded roasted checked without skin
- 8 ounces penne pasta
- 1 package Feta cheese (8 oz)
How To Make penne with chicken, roasted tomatoes, and feta

Step 1Preheat oven to 475 degrees F. Cut tomatoes in half.

Step 2Mix tomatoes, oil, garlic, and red pepper.

Step 3Place on a rimmed cookie sheet.

Step 4Roast, stirring occasionally, until tomatoes are soft and slightly beginning to brown in spots, about 25 minutes.

Step 5Transfer tomato mixture, including juices, to a large skillet. Add chicken.

Step 6Simmer until heated through, about 5 - 7 minutes.

Step 7Cook pasta according to package directions.

Step 8Drain pasta, reserving 1/4 cup of pasta water.

Step 9Add tomato and chicken to a large pot with cooked pasta. Add reserved water.

Step 10Toss.

Step 11Transfer to a serving dish and sprinkle with Feta cheese; serve.
