Penne with Chicken, roasted Tomatoes and Feta

312oz bag cherry tomatoes

2 Tbspolive oil

5large garlic cloves (or 5 tablespoons of minced jar garlic)

3/4 tspdried crushed red peppers

2 cshredded roasted checked without skin (or buy already made roasted chicken)

8 ozpenne pasta

1 pkgfeta cheese
How to Make Penne with Chicken, roasted Tomatoes and Feta
- Preheat oven 475
- Cut tomatoes in half. mix tomatoes, oil, garlic and red pepper. Place on rimmed cookie sheet and roast stirring occasionally until tomatoes are soft and slightly beginning to brown in spots.
- Transfer tomato mixture including juices to large skillet and add chicken, simmer until heated through.
- Cooked & drain pasta reserving ¼ cup of pasta water.
- Add tomato and chicken to large pot with cooked pasta and reserved water and toss. Transfer to serving dish and sprinkle with feta cheese, serve.
