penne w/tomatoes & basil - bobby flay

Simple and delicious pasta recipe from Bobby Flay !!

Ingredients

  • 2 tablespoons canola oil
  • 1/2 large spanish onion diced
  • 4 cloves garlic made into paste
  • 1 28 oz. cans plum tomatoes
  • 8 ounces penne pasta
  • pinch kosher salt & black pepper to taste
  • 3/4 cup plus 3/4 c. parmigiano or romano cheese
  • 1/4 cup flat leaf parsley, finely chopped
  • 12 fresh basil leaves, torn
  • 1/4 to 1/2 teaspoon calabrian red chile flakes
  • extra virgin olive oil for drizzling
  • 1/2 cup fresh ricotta cheese, for garnish

How To Make penne w/tomatoes & basil - bobby flay

  • Step 1
    Put a pot of water up to boil for pasta - add kosher salt cook until 1 or 2 minutes before pkg directions (al dente)
  • Step 2
    Cook onion & garlic in canola oil. Add can of plum tomatoes and break them up...then add salt, pepper, cheese, parsley, basil leaves (torn) & the red chile flakes (optional)...simmer sauce about 15 min.
  • Step 3
    Drain cooked pasta, then add into the sauce in pan....mix pasta with the sauce....drizzle with a bit of olive oil....add fresh ricotta for garnish if desired
