Ingredients

  • 2 cans diced tomatos, i prefer the basil, oregano & garlic
  • 1/2 - vidallia onion, diced
  • 2 cloves garlic
  • 2 tablespoons evoo
  • 1/4 cup vodka
  • 1/2 cup shredded parmesan
  • 1 cup heavy whipping cream
  • 1-2 dash crushed red pepper
  • 1 box penne or pasta of your choice
  • 1 tablespoon tomato paste - optional

How To Make penne alla vodka

  • Step 1
    Dice your onion and crush your garlic cloves. Add them to a large pot with olive oil, simmer for 5-10 minutes or until onions are clear
  • Step 2
    While your onions are simmering, open the tomatoes and drain as much liquid out of the can. Add the tomatoes to the onion mixture when the onions are ready. Simmer on low for 30 minutes, stirring frequently.
  • Step 3
    Once the tomato mixture has cooked, add the remaining ingredients (except the pasta). Stir frequently for 30 minutes, be careful not to let the cheese burn to the bottom of the pan.
  • Step 4
    Cook your pasta al dente in the middle of step 3.
  • Step 5
    If your sauce isn't thick enough, add a tablespoon of tomato paste. This will give the sauce a velvet texture and sweeten it up even more.
