I usually drain about 1/3 - 1/2 of the liquid from the cans of diced tomatoes to avoid the need for corn starch. And I add extra red pepper flakes for extra spicy flavor.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 3-4 cloves garlic, minced
  • 2 14.8 ounces cans diced tomatoes-with basil, garlic and oregano
  • 1/2 cup fresh chopped basil
  • 1/2 teaspoon crushed red pepper flakes
  • 1 teaspoon each onion and garlic powder
  • 1/8 - 1/4 cup minced onion
  • 1/4 cup vodka
  • 1 box penne pasta
  • 3/4 pint heavy cream
  • 2-3 tablespoons sugar
  • 1/4 cup shredded parmesan cheese (optional)
  • 2 tablespoons corn starch (optional if sauce is thin)

How To Make penne a la vodka

  • Step 1
    Cook penne pasta according to package directions. Drain and set aside.
  • Step 2
    In a skillet, heat olive oil over medium heat. Add garlic and onions cooking until tender (1-2 minutes).
  • Step 3
    Add cooked garlic and onions to a large sauce pan with diced tomatoes, chopped basil, red pepper flakes, garlic powder and onion powder. Simmer 15 minutes.
  • Step 4
    Add vodka and sugar and simmer 15 more minutes.
  • Step 5
    Add heavy cream and cook 10 more minutes. If the sauce is thin, add the Parmesan cheese a little bit at a time, and corn starch until the sauce is desired creamy consistency.
