You can use any pasta you want, but I found that thinner pasta is the best, so I used spaghetti. Fettuccine, angel hair, or linguine would also work well.

Ingredients

  • 1/2 cup drained sun-dried tomatoes, chopped
  • 1/3 cup walnuts
  • 1 clove garlic
  • 1/2 cup olive oil
  • 0 - salt and pepper, to taste
  • 12 ounces pasta
  • 1/2 cup shredded Parmesan cheese

How To Make pasta with sun-dried tomato and walnut pesto

  • Step 1
    Place the sun-dried tomatoes, walnuts, and garlic in a food processor. Process while drizzling in the olive oil until it smooth-ish. Season with salt and pepper. Set aside.
  • Step 2
    Boil a pot of salted water. Add the spaghetti and cook about 15 minutes until aldente. Drain, reserving 1/2 cup cooking water.
  • Step 3
    Add the pasta back to the pot and toss with the pesto and cooking water. Sprinkle with Parmesan and stir again. Serve.
