How to Make Pasta with Pesto

Step-by-Step

  1. To make the pesto, place the garlic, pine nuts and a large pinch of sea salt in a blender or food processor and process briefly. Add the basil leaves and process to a paste.
  2. With the motor running, gradually add the oil. Scrape into a bowl and beat in the cheese. Season to taste with salt.
  3. Bring a large pan of lightly salted water to a boil. Add the pasta, return to a boil, and cook for 8 to 10 minutes, or until tender but still firm to the bite. Drain well, return to the pan and toss with half of pesto, then divide between warmed serving plates and top with the remaining pesto. Garnish with basil sprigs and serve.
