onions, diced
1/4 c
3/4 c
celery, chopped
1/2 c
green bell pepper, chopped
2 c
mushrooms, sliced
garlic cloves, minced
4 c
tomatoes, chopped
3 c
tomato sauce
2 c
tomato puree
1 tsp
dried oregano
1.5 tsp
dried basil
bay leaf
"just a pinch" of salt
"just a pinch" of pepper
1 lb
spaghetti, uncooked


1Heat the water (or may us olive oil instead) in a large saucepan over medium heat. Cook the onions for 5 to 6 minutes, then add the celery, green pepper, mushrooms, and garlic and cook for an additional 5 minutes.
2Add the tomatoes, tomato sauce, and tomato puree and stir until the sauce is well blended.
3Add the herbs, salt, and pepper and simmer, uncovered, for 30 minutes.
4Cook the pasta according to package directions.
5Remove the bay leaf from the sauce and serve with pasta.
