pasta with chicken and herbs for two
This was a Betty Crocker recipe that I've adapted for two and to our taste. The recipe called for orzo, but other pasta, couscous, barley, or even rice, could be used. I use my rice cooker for nearly anything! Prep time is for chopping the herbs. Cook time is only for the pasta or rice. If you cook your own chicken, that needs to be included, but I often use canned (like tuna) to save time. The recipe calls for basil, oregano, marjoram, thyme, or a combination. I suggest that you experiment with your own herbs or combinations. Let me know what works best for you.

Ingredients
- 1/4 cup uncooked pasta
- 1/2 pint cherry or grape tomatoes, halved
- 1 tablespoon olive oil
- 1 tablespoon white wine vinegar
- 1/4 teaspoon salt
- 1 pinch pepper
- 3 tablespoons chopped fresh herbs
- 1 cup diced cooked chicken
- 1/2 cup small balls of mozzarella
- 2 large butter lettuce leaves
- 2 cloves garlic, diced
How To Make pasta with chicken and herbs for two

Step 1Cook, drain, and rinse pasta.

Step 2Mix Tomatoes, garlic, oil, vinegar, salt, pepper and herbs.

Step 3Add chicken, cheese, and pasta.

Step 4Toss to mix. Place on lettuce leaf. Serve and enjoy.
