Ingredients

  • 3 cups tomato puree
  • 1-1/2 cup whipping cream
  • 1/2 cup freshly grated romano cheese
  • 1/2 cup coarsely shredded fontina cheese
  • 2 tablespoons ricotta cheese
  • 1 teaspoon crushed red pepper
  • 1 teaspoon kosher salt
  • 5 quarts water
  • 1 - head cauliflower, coarsely chopped
  • 1 pound penne
  • 3 tablespoons unsalted butter
  • - salt to taste

How To Make pasta with cauliflower in spicy pink sauce

  • Step 1
    Mix the first seven ingredients in a bowl; set aside. Bring salted water to a boil in a large saucepan. Add the cauliflower and pasta. Cook for 5 minutes; drain.
  • Step 2
    Add the pasta mixture to the cheese mixture, tossing to combine well. Spoon into a baking dish or 6-8 individual shallow baking dishes. Top with butter. Bake at 500^ for 7-10 minutes or until bubbly & browned.
