Ingredients

  • 1 pound fettuccine pasta
  • 3 tablespoons cold butter, cut into 6 pieces
  • 3 large eggs
  • 0 - salt, to taste
  • black pepper, to taste
  • 1 pinch ground nutmeg
  • 1 cup finely grated Parmesan cheese
  • - fresh basil for garnish

How To Make pasta with butter egg sauce

  • Step 1
    Bring a pot of water to a rolling boil. Add salt to taste like the ocean. Add the fettuccine and cook until al dente, about 15 minutes. Drain the pasta.
  • Step 2
    Add the pasta back to the pan and place over low heat. Add the seasoning and taste. Add the butter, 3 pieces at a time, and let it melt.
  • Step 3
    Then remove from the heat and add the eggs, stirring vigorously to coat the pasta. Add the Parmesan and keep stirring.
  • Step 4
    Place the pasta in bowls and garnish with basil and more Parmesan if desired.
