Ingredients
- 8 ounces angel hair pasta
- 6 slices bacon
- 4 cups garlic minced
- 1 cup cremini mushrooms sliced
- 3 tablespoons freshly grated parmesan cheese
- 3 large egg yolks
- 1/2 cup creme fraiche
- 1/2 cup frozen peas
- salt and pepper
- fresh grated parmesan cheese
- fresh parsley or basil
How To Make pasta with bacon mushrooms and peas

Step 1Fill a large pot with water. Add some salt and bring to a boil. Add the angel hair pasta and cook until al dente about 15 minutes.

Step 2While the pasta is cooking. Place the bacon in a large skillet and cook until crisp. Remove and set aside. Add the garlic to the bacon dripping and saute 30 seconds. Add the mushrooms and cook about 5 minutes. Take off heat and set aside.

Step 3Place the egg yolks in a bowl and whisk until frothy. Add the creme fraiche, and parmesan cheese. Set aside.

Step 4Place the bacon, mushroom mixture back on the stove and add the peas with a couple of spoonfuls of pasta water. Cook until peas are cooked 3 minutes.

Step 5Drain the pasta reserving a half cup of pasta water. Place the pasta and pasta water into the bacon mushroom mixture. Stir well then over low heat pour the egg mixture over the pasta stirring constantly. Stir in the herbs of choice and serve with more Parmesan cheese.
