Ingredients

  • 16 oz
    linguini, cooked
  • 1/8 c
    olive oil
  • 1/2 c
    diced onion
  • 2 Tbsp
    thyme, fresh, chopped
  • 1/2 c
    dry white wine
  • 2 c
    chicken stock
  • 1/4 c
    lemon juice
  • 1 Tbsp
    lemon zest
  • 1/2 c
    sundried tomatoes, chopped
  • 1 c
    artichoke hearts, sliced
  • 1 pinch
    salt
  • 1 pinch
    pepper

How to Make Pasta with Artichokes and Sun-Dried Tomatoes

Step-by-Step

  1. Heat oil in a large saucepan over medium-high heat, and cook onion until tender.
  2. Mix in thyme and cook until onion is golden brown.
  3. Stir in white wine. Cook until reduced by about 1 tablespoon.
  4. Mix in the chicken stock, lemon juice, and lemon zest. Reduce heat to medium, and continue cooking about 10 minutes.
  5. Mix in the artichokes and sun dried tomatoes and cook until just heated through. Toss with cooked pasta. Season with salt and pepper.
