Ingredients

  • 16 ounces linguini, cooked
  • 1/8 cup olive oil
  • 1/2 cup diced onion
  • 2 tablespoons thyme, fresh, chopped
  • 1/2 cup dry white wine
  • 2 cups chicken stock
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1/2 cup sundried tomatoes, chopped
  • 1 cup artichoke hearts, sliced
  • 1 pinch salt
  • 1 pinch pepper

How To Make pasta with artichokes and sun-dried tomatoes

  • Step 1
    Heat oil in a large saucepan over medium-high heat, and cook onion until tender.
  • Step 2
    Mix in thyme and cook until onion is golden brown.
  • Step 3
    Stir in white wine. Cook until reduced by about 1 tablespoon.
  • Step 4
    Mix in the chicken stock, lemon juice, and lemon zest. Reduce heat to medium, and continue cooking about 10 minutes.
  • Step 5
    Mix in the artichokes and sun dried tomatoes and cook until just heated through. Toss with cooked pasta. Season with salt and pepper.
