Ingredients

  • BREAD CRUMBS:
  • 2 tablespoons olive oil, extra virgin
  • 1/2 cup olive oil, extra virgin
  • 1 1/2 cups bread crumbs, fresh
  • 2 cloves garlic, minced
  • - salt & pepper, to taste
  • PASTA & SHRIMP:
  • 3/4 pound pasta shells, medium
  • 1 pound shrimp, large, peeled, deveined & sliced in 1/2 lengthwise
  • DRESSING:
  • 3 tablespoons lemon juice, fresh
  • 3/4 teaspoon worcestershire sauce
  • 1 teaspoon anchovy paste (optional)
  • BEDDING & GARNISH:
  • 2 1/2 cups endive, curly, shredded
  • 1/3 cup parmesan cheese
  • 2 tablespoons parmesan cheese

How To Make pasta shells with shrimp & garlicky bread crumbs

  • Step 1
    FOR THE BREAD CRUMBS: In a medium nonstick frying pan, heat the 2 Tbsp oil over moderate heat. Add the bread crumbs, garlic & 1/8 tsp each of salt & pepper & cook, stirring frequently, until golden, about 5 minutes.
  • Step 2
    FOR THE PASTA AND SHRIMP: In a large pot of boiling, salted water, cook the pasta shells until almost done, about 10 minutes. Add the shrimp to the pot & cook, stirring occasionally, until both the shrimp & the pasta shells are done, 2 to 3 minutes longer. Drain thoroughly.
  • Step 3
    FOR THE DRESSING: In a large glass or stainless-steel bowl, whisk together the lemon juice, anchovy paste (if using), worcestershire sauce & 1/4 tsp each of salt & pepper. Add the remaining 1/2 C oil slowly, whisking.
  • Step 4
    TO SERVE: Add the pasta & shrimp, the curly endive, & the 1/3 C parmesan to the dressing & toss. Serve the salad warm or at room temperature, topped with the garlic bread crumbs & the remaining 2 Tbsp parmesan.
