Ingredients
- 1/2 pound italian sausage, sweet
- 1/2 onion, chopped
- 1/4 cup red wine
- 1/2 cup water, reserved from cooking pasta
- 16 ounces plain pork & beans
- 8 ounces tomato sauce
- 14 1/2 ounces diced tomatoes (fire roasted are best)
- 1/2 pound elbow pasta, cooked
- 1 teaspoon oregano
- 1 clove garlic, chopped
How To Make pasta fagioli

Step 1Cook pasta according to package directions.

Step 2Fry sausage until no longer pink in saucepan. Add onions & fry until translucent. Add garlic and fry 1-2 minutes until fragrant.

Step 3Deglaze the pan with red wine & pasta water. Add beans, tomato sauce & diced tomatoes. Warm through.

Step 4Add pasta & oregano. Simmer until sauce thickens, stirring occasionally to make sure nothing sticks to the bottom of the pot.

Step 5Serve hot topped with Parmesan cheese.
