Ingredients
- 1 pound medium shells or ditali
- 1 pound ricotta cheese (any kind works with this recipe)
- 1/2 cup milk or you can use some of the pasta water
- 2-4 tablespoons butter (optional)
- - parmesan cheese
How To Make pasta con ricotta (macaroni with ricotta)

Step 1Cook pasta according to package in salted water.

Step 2Drain pasta (if your using pasta water make sure to reserve about 1 cup). Return pasta to the pot and add the butter if using.

Step 3Mix the ricotta into the pasta and add either the milk or pasta water. (If using pasta water start with just using a 1/2 cup. You want it moist but not soupy)

Step 4OR You can mix the ricotta and milk together in a bowl until smooth and pour over the hot pasta. I like to keep it simple and not dirty an extra dish :)

Step 5Some people like to add the parmesan cheese to the pasta at this point and serve but I always serve and let everyone add their own parmesan cheese which is on the table.
