Ingredients
- 1 stick unsalted butter
- 1 pound penne pasta
- 1/4 cup goat cheese, in chunks
- 1/2 cup freshly grated parmesan cheese
- 1/2 cup freshly grated pecorino romano cheese
- 1/4 cup shredded gruyere cheese
- - freshly ground black pepper as desired

Step 1Melt the butter in a heavy-bottomed saucepan; set aside. Bring a large pot of lightly salted water to a boil over high heat. Add the penne and cook according to package directions.

Step 2Drain and add to the butter in the sauce pan. then mix in the cheeses, one at a time, turning the noodles thouroughly as you go. serve hot with freshly ground black pepper
