Ingredients
- 10 - 12 ounces spaghetti
- 6 ounces smoked bacon
- 3 cloves garlic, minced
- 1 1/2 teaspoons ground black pepper
- 4 large eggs
- 1 cup freshly grated Parmesan cheese
- 2 tablespoons fresh chopped parsley
- 1 dash salt
How To Make pasta carbonara with smoked bacon

Step 1Bring a large pot of salted water to a boil. Add pasta. Cook until al dente, drain, and set aside.

Step 2While the pasta is cooking, heat a large skillet over medium heat and cook cut bacon pieces (1" x 1/8") until browned (crisp if you like, or softer if you prefer).

Step 3Remove bacon from skillet with slotted spoon or spatula and set aside. Add garlic to the skillet with the heat off. Return bacon to skillet and stir thoroughly, allowing the garlic to cook for 1 minute.

Step 4Whisk eggs, pepper, and Parmesan cheese until blended well. Drain pasta and add to the skillet over the bacon and garlic. Cook over medium heat for 1 minute, tossing and mixing well.

Step 5Turn off the heat and remove the skillet from the burner. Pour the egg/pepper/Parmesan mixture over the pasta and mix well. The heat from the pasta will slightly cook the egg mixture. You do not want to do this over heat, as the eggs will scramble, and you don't want that. The mix will create a creamy sauce. You may add a touch of the pasta water to make it slightly more creamy, but that is not required.

Step 6Plate the pasta, sprinkle each serving with parsley and additional Parmesan cheese. Enjoy with bread and salad!
