This is by far one of my boys favorite pasta dishes! It is so delicious! I make two pounds of pasta and there literally are no leftovers! It is a must try! Hope you love it as much a we do. Thanks Monica

Ingredients

  • 1 box spaghetti, i use multi grain but regular is fine
  • 1 package diced panchetta package is 5 oz
  • 3 - eggs
  • 1 cup parmesan cheese
  • 3 - cloves garlic minced
  • - olive oil
  • - handful of italian parsley chopped
  • - reseserve pasta water
  • - salt to season water for pasta
  • - salt and pepper to taste.

How To Make pasta carbonara

  • Step 1
    Place a large pot of water on and bring to a boil...When boiling put the spaghetti in.
  • Step 2
    in a large saute pan/dutch oven add olive oil and when hot add the panchetta and cook until browned
  • Step 3
    add the minced garlic and cook a few minutes. Remove from heat until pasta is cooked. In the mean time, crack the eggs in a bowl and beat
  • Step 4
    add the grated Parmesan cheese
  • Step 5
    when about to drain the pasta, return the panchetta and garlic to the heat. add a bit more olive oil if needed. you want enough to coat the pasta.
  • Step 6
    add the pasta to the panchetta pan mix well and cook a few minutes. Remove from heat
  • Step 7
    Add the egg and cheese mixture to the pan and mix quickly and well. At this point you will probably need to add some pasta water.
  • Step 8
    Add a little at a time, this will help to develop a creamy sauce.
  • Step 9
    Add the parsley here, or I wait and add it on the individual dish cause one some doesn't like it. Add more cheese and serve! yum
