pancetta chive mac & cheese
I was going to make the "standard" baked mac & cheese for dinner when I came across some Pancetta and Chive & Onion cream cheese in the fridge. So I figured what the heck I'll try something new. I mean my bagels had gotten moldy before I could use the cream cheese anyway, lol. I used cheddar cheese because that's what I had on hand but I think this would be really good with Monterey Jack cheese too.

Ingredients
- 16 ounces elbow macaroni, cooked
- 16 ounces cheddar cheese
- 1/2 cup cheddar cheese, shredded
- 1/4 cup butter
- 1/2 cup milk
- 8 ounces philadelphia chive & onion cream cheese
- 4 ounces pancetta, diced (boar's head)
How To Make pancetta chive mac & cheese

Step 1Preheat oven to 350.

Step 2Saute Pancetta for 10-12 min or until cooked through and crispy.

Step 3In a medium sauce pan, add 16 oz cheddar cheese, butter, and milk. Heat over medium until cheese is melted and creamy.

Step 4Stir cheddar cheese mixture and pancetta into cooked pasta.

Step 5Heat opened container of cream cheese in microwave for 30 sec, stirring after 15, to soften. Add cream cheese to pasta mixture.

Step 6Put pasta mixture into an oven proof casserole dish. Top with 1/2 Cup shredded cheese.

Step 7Bake for 45 min or until heated through and cheese on top has melted and become crispy.
