overloaded mac n cheese
everything I like on a loaded bake potato I put in my mac n cheese!! Even topped with sour cream and onion chips! Yummmy!!!

Ingredients
- 1/2 pound bacon
- 2 tablespoons butter
- 3 tablespoons flour
- 1 1/2 cups milk
- 1/2 cup sour cream
- 2 cups shredded sharp cheddar
- 1 cup shredded colby jack cheese
- 1/4 teaspoon cayenne pepper
- - few pinches of salt
- 3 tablespoons fresh chopped chives
- 1 pound cooked macaroni al dente
- TOPPING
- 1/2 cup mixed cheese
- 1 cup crushed sour cream and onion potato chips
How To Make overloaded mac n cheese

Step 1Cook pasta in salted water for approximately 8mins. Al dente.

Step 2In mean time add cut bacon to pan and cook till crisp. Remove from pan. Place and drain on brown paper bag. Add two tablespoons butter to bacon fat. Melt on med heat. Add 3 tablespoons flour continuely wisking for 3mins. Pour in milk while stiring and bring to bubble. Add in sour cream. Let the milk thicken a bit.

Step 3Add in all mixed cheeses except 1/2 cup reserved for top. Season cheese sauce with cayenne pepper and salt, mix then add crispy bacon and chives and stir.

Step 4Pour pasta in cheese sauce and mix well. Pour into baking dish. Top with 1/2 cup remaining cheese then crushed chips. Bake in oven at 350 for about 25 minutes till bubbly golden brown. Let rest for five minutes before serving.
