- 16 ounces orzo pasta, uncooked
- 1 bag spinach, fresh
- 4 - garlic cloves, smashed
- 8 ounces goat cheese
- 1 tablespoon olive oil
- 1 teaspoon white truffle oil
- - salt and pepper to taste
How To Make orzo, spinach & goat cheese

Step 1cook orzo according to package ( al dente) firm to taste.

Step 2In a skillet turn to med high, put olive oil and smashed garlic...turn off and put the spinach..it will wilt down with the remainder of the heat...tossing

Step 3drain Orzo and rinse making it less starchy..in a large bowl combine with the spinach mixture, add the white truffle oil and break up the goat cheese in small chunks

Step 4gently combine well, the warmth with meld the cheese into the goodness of the Orzo...garnish if you like with sundried tomatoes...ENJOY...
