How to Make Orzo, Spinach & Goat Cheese
- cook orzo according to package ( al dente) firm to taste.
- In a skillet turn to med high, put olive oil and smashed garlic...turn off and put the spinach..it will wilt down with the remainder of the heat...tossing
- drain Orzo and rinse making it less starchy..in a large bowl combine with the spinach mixture, add the white truffle oil and break up the goat cheese in small chunks
- gently combine well, the warmth with meld the cheese into the goodness of the Orzo...garnish if you like with sundried tomatoes...ENJOY...
