Oriecchiette are little bowl-shaped pasta "ears" that hold creamy sauces very well. For this, I used a chicken-garlic-spinach sausage. You can use any kind, really.

Ingredients

  • 10 oz
    oricchiette pasta
  • 2 Tbsp
    olive oil
  • 1 small
    onion, minced
  • 2 clove
    garlic, minced
  • 1 small
    crown of broccoli, chopped, including stem diced
  • 2-4
    sausage links, such as chicken sausage, chicken-garlic sausage, chicken-spinach-feta sausage, cut into small pieces
  • 1 c
    chicken stock
  • 1/2 c
    cream
  • 1/2 c
    good grated cheese such as romano or parmeggiano
  • ·
    fresh ground pepper and (optional) sprinkle of dried pepper flakes

How to Make Oricchiette with sausage and broccoli

Step-by-Step

  1. Cook pasta according to directions. In a medium saute pan, saute onion and garlic in olive oil until onions are translucent. Add broccoli and saute for 3-4 minutes, until it just starts to soften.
  2. Add sausage and saute for 3 min. When skins start to curl a bit...
  3. add broth and bring to a boil for 10min. Add cream and pasta and turn heat to low. Simmer for 5min. Add cheese, stir well, and add pepper and pepper flakes, if desired.
