Orecchiette are little bowl-shaped pasta "ears" that hold creamy sauces very well. For this, I used a chicken-garlic-spinach sausage. You can use any kind, really.

Orecchiette pasta and sausage are the stars of this meal. There's also onion and garlic that give a good base of flavor. Instead of a heavy sauce, there's a thin cream and cheese sauce that's just enough to coat the pasta, sausage, and broccoli and add a nice flavor. This is a hearty pasta dinner that can quickly be whipped up.

Ingredients For orecchiette with sausage and broccoli

  • 10 oz
    orecchiette pasta
  • 2 Tbsp
    olive oil
  • 1 sm
    onion, minced
  • 2 clove
    garlic, minced
  • 1 sm
    crown of broccoli, chopped, including stem diced
  • 2-4
    sausage links, such as chicken sausage, chicken-garlic sausage, chicken-spinach-feta sausage, cut into small pieces
  • 1 c
    chicken stock
  • 1/2 c
    heavy cream
  • 1/2 c
    good grated cheese such as Romano or Parm-Reggiano
  • fresh ground pepper and (optional) sprinkle of dried pepper flakes

Test Kitchen Tips
We used a 12 oz package of chicken sausage.
  • Cooking orecchiette pasta.
    Cook pasta according to directions.
  • Saute onion and garlic; then add broccoli.
    In a medium saute pan, saute onion and garlic in olive oil until onions are translucent. Add broccoli and saute for 3-4 minutes, until it just starts to soften.
  • Add sausage to pan.

  • Add broth to the pan.
    Add broth and bring to a boil for 10 min.
  • Adding cream to the pan.
    Add cream.
  • Adding cooked pasta to the pan.
    Then add pasta and turn the heat to low. Simmer for 5 min.
  • Stirring in cheese.
    Add cheese and stir well. Add pepper and pepper flakes, if desired.
