I like making different kinds of soup,,I live in a seniors complex and there many single men and women most of them hate cooking just for one person,,I had a lady friend living here and she hated cooking so I would freeze the soups I made and she would buy them along with frozen dinners I made, my friend spread the word about the meals and I had several people asking for the frozen soup and dinners I made.I have stopped now as I am 86 and the body has slowed down.

Ingredients
- 2 tablespoons olive oil, extra virgin
- 4 large cooking onions chopped
- 4 - stalks celery chopped
- 3 small parsnips
- 4 medium cloves garlic chopped
- 2 cups water
- 4 cups mashed potatoes
- 6 cups vegie or chicken stock
- 2 tablespoons chopped fresh thyme
How To Make onion celery soup

Step 1In large pot heat oil and add all the vegetables except the potatoes and saute for 15 minutes add potatoes, thyme and chicken stock and water and simmer 15 minutes add garlic and cook for another 10 minutes, turn off heat let soup cool.

Step 2In blender puree the soup ..I pour 2 serving amounts into plastic containers and freeze when frozen I put the frozen soup in baggies and this gives me more room to make more soup.
