Ingredients
- 3 cups grape tomatoes halved
- 1 large onion diced
- 4 - andouille sausage cut into coins
- 2 - jalapenos seeded and diced
- 4 cloves garlic minced
- 1 pound dry spaghetti
- 1/2 cup cilantro chopped
- 2 teaspoons salt
- 1 teaspoon black pepper
- 6 cups water
- 1 cup sour cream
- 1 cup shredded oaxaca cheese or mozerella

Step 1Reserve half the tomatoes and cilantro and set aside.

Step 2Place all ingredients except sour cream and cheese in large pot. Cover and bring to a boil. Once boiling uncover and continue to cook until most of moisture in gone and spaghetti is cooked. Stir in the sour cream and cheese. Cook until cheese melts.

Step 3Stir in the reserved tomatoes and cilantro. Top with more sour cream for serving (optional)
